Tasting note

Colour & Appearance
White gold with silvery reflections, a fine yeast haziness and lively perlage.
Nose
An opening of pure freshness and yeasty depth. It reveals yellow fruit notes of apple, pear, honeydew melon and quince compote, interwoven with floral nuances such as elderflower and linden blossom. A fine earthy undertone evokes memories of freshly baked braided yeast bread with butter and honey.
Palate
Straightforward, miles away from industrial boiled-sweet sweetness. The subtle herbal structure and yeasty texture are wonderfully stimulating. At a light 11.0% vol. alcohol, it displays a vibrant dynamism that makes this artisanal sparkling wine the ideal elixir of drinkability.
Terroir & Origin
Originating from Santo Stefano di Valdobbiadene in the heart of the DOCG. The vines, up to 120 years old, cling to lean marl soils and limestone on extremely steep slopes (heroic viticulture) at 250 to 400 metres altitude. Farming is entirely organic.
Grape Variety & Vinification
Single-varietal Glera from historic massal selection. Following selective hand-harvesting, the must from the first pressing undergoes spontaneous fermentation. The second fermentation takes place according to the traditional method (Col fondo) in spring directly in the bottle – without disgorgement, dosage or filtration.
Food Pairings
Pairs excellently with Venetian cichetti, crustaceans, risotto with spring herbs or fine antipasti misti.
Key Features
A fascinating natural wine from the Consorzio Vini Veri: Unfiltered and aged on its lees, it reveals the original, natural face of Prosecco prior to the era of industrial pressure tanks.
