Tasting note
Colour & Appearance
Pale straw yellow with greenish reflections, vibrant, fine perlage that has formed naturally in the bottle. The mousse appears creamy and persistent, a sign of traditional bottle fermentation using the old method.
Nose
This natural frizzante presents itself with unvarnished honesty: white flowers, green apple and lemon zest dominate, accompanied by a delicate yeast note and a hint of chamomile. The Verdiso grape adds a characteristic mineral component and subtle herbal spice – less perfumed than conventional Prosecco, but more authentic and multifaceted.
Palate
Here the true class reveals itself: crisp and lively, with a racy acidity that harmonises perfectly with the subtle residual sweetness. White peaches, pear and citrus fruits meet a saline minerality from the marl soils. The 80-year-old vines impart surprising depth and concentration. Dry on the finish, with a pleasant texture reminiscent of brioche.
Finish
Medium length and refreshing, with persistent citrus freshness and a delicate bitter almond note. The natural vinification leaves a clean, unadulterated impression – no sugar masks the origin here.
Terroir & Origin
From the heartland of the Prosecco region in Santo Stefano di Valdobbiadene, where lean marl soils between 250 and 400 metres provide elegance and minerality. Organic cultivation and 80-year-old vines with Selezione Massale guarantee genetic diversity and character strength.
Grape Variety & Vinification
Glera and Verdiso are hand-harvested, with only the Tête de Cuvée used. Spontaneous fermentation with native yeasts, traditional bottle fermentation in spring – the must completes fermentation in the bottle, entirely without additives. Pure authenticity.
Food Pairing Recommendations
Perfect as an aperitivo with Crudo di Mare, Vitello Tonnato or Burrata with lemon. Excellent with pan-fried sole fillet, Risotto agli Asparagi or fried courgette flowers.
Special Features
Member of the Consorzio Vini Veri. The magnum bottle underscores the celebratory character of this authentic natural frizzante – an anti-Prosecco for purists that demonstrates what Glera can truly achieve.
