Wine with pasta – from ragù to vongole

The perfect partner for every sauce

From spicy tomato sugo to creamy carbonara

Pasta and wine – an Italian love story. Yet not every wine suits every pasta. The sauce decides: tomato-based ragùs call for different wines than a vongole with garlic and white wine.

Pasta with red wine – watercolour illustration

In short — which wine with pasta? It is the sauce that decides, not the pasta: with ragù and bolognese, choose acid-driven Italians such as Chianti or Barbera; with vongole, mineral whites; with carbonara, creamy, fresh white wines. For spicy sauces such as arrabbiata, the rule is: plenty of fruit, little tannin.

Wines in the shop

At lebendigeweine.de, we have selected our finest partners from over 130 wines recommended for pasta. As specialists in natural and biodynamic wines, we offer you recommendations that you will not find at other wine merchants.

The essentials at a glance: the sauce determines the wine, not the pasta. Tomato sauces suit acid-driven Italian red wines. Seafood pasta calls for fresh, crisp white wines. And creamy sauces? They need wines with body and a smooth texture.

Rich tomato sauces: ragù & amatriciana

Pappardelle with ragù and Chianti – wine pairing

Ragù alla bolognese, amatriciana, arrabbiata – the great tomato classics of Italian cuisine call for red wines with lively acidity. Why? The acidity of the wine harmonises with the natural acidity of the tomato and enhances its fruity aromas.

Italian classics such as Chianti, Nero d’Avola or wines from Montalcino are at home here. Their earthy notes and present tannins complement the umami depth of a well-reduced ragù.

Our tip: the longer the sauce simmers, the more powerful the wine may be. A quick marinara only needs a light Chianti, whereas a ragù pairs beautifully with a mature Rosso di Montalcino.

Spicy sauces: Arrabbiata & Puttanesca

Penne Arrabbiata with Primitivo – wine pairing

Penne all’Arrabbiata, Spaghetti alla Puttanesca, pasta with ‘Nduja – when peperoncino is involved, different rules apply. Spice and heavy tannins do not get along. The heat intensifies the astringency and makes the wine taste bitter.

The solution: fruity, light red wines with soft tannins. The fruit sweetness balances the spiciness, while the acidity refreshes. Italian classics such as Montepulciano or a juicy Gamay from Beaujolais are ideal companions.

Our tip: The spicier the dish, the cooler the wine. Serve fruity reds at 14–16°C – the coolness further soothes the heat.

Seafood: Vongole & Frutti di Mare

Linguine Vongole with Vermentino – wine pairing

Spaghetti alle Vongole, Linguine ai Frutti di Mare, Pasta allo Scoglio – here white wine reigns supreme. The salty minerality of clams and prawns, the garlic, the olive oil and the splash of white wine in the pan all call for a fresh and crisp companion.

Chablis from Burgundy is a classic with seafood – its chalky-mineral note and taut acidity harmonise perfectly. But Italian whites such as Pinot Grigio or a full-bodied Verdicchio are also outstanding partners.

Our tip: Use the same wine for the sauce that you intend to drink with it – this way the aromas enhance one another!

Creamy sauces: Carbonara & Cacio e Pepe

Carbonara with Chardonnay – wine pairing

Carbonara, Alfredo, Cacio e Pepe – creamy pasta classics need wines with body and a melting texture. The richness of egg, cheese and guanciale calls for a partner that neither gets lost nor dominates.

Whites with substance are ideal here: a powerful Grüner Veltliner from the Wachau or an elegant Tuscan white. But light red wines such as Amarone also work surprisingly well – its subtle residual sweetness and full body caress the creamy sauce.

Our tip: Never serve a wine with too much acidity alongside Carbonara – it clashes with the creaminess of the egg yolk!

Light & Herby: Pesto & Aglio e Olio

Trofie al Pesto with Soave – wine pairing

Aglio e Olio, Pasta Primavera, Pesto – with these light pasta dishes, olive oil takes centre stage. Herbs, garlic and fresh vegetables dominate. Heavy wines are out of place here.

Crisp white wines and fresh rosés are the ideal partners. A southern French blanc, a zesty Lambrusco Rosato or an elegant Burgundy – they all share the fresh, herbal character of these dishes.

Our tip: With Pesto Genovese (basil), a herbaceous white wine from the Languedoc is a superb match. The Mediterranean aromas enhance one another.

Frequently asked questions

Which wine goes best with spaghetti Bolognese?

Ragù alla Bolognese pairs beautifully with Italian red wines that have vibrant acidity, such as Chianti, Barbera d’Alba or a Rosso di Montalcino. The lively acidity of Sangiovese harmonises with the tomato’s acidity, while the tannins complement the meat sugo. The longer the ragù simmers, the more robust the wine may be.

Does red wine go with seafood pasta?

As a rule, no – for seafood pasta we recommend fresh and crisp white wines such as Chablis, Pinot Grigio or Verdicchio. The salty minerality of the shellfish and the garlic-and-oil base harmonise with fresh whites. The only exception: very light, chilled red wines with tuna pasta.

Which wine with carbonara?

Carbonara is creamy and rich – here full-bodied white wines such as Grüner Veltliner from the Wachau or a powerful Tuscan white are ideal. An Amarone also works surprisingly well: its full body and subtle sweetness caress the egg yolk sauce. Avoid wines with too much acidity.

Which wine with pesto?

Pesto Genovese (basil, pine nuts, Parmesan) calls for herbaceous white wines from southern France or Liguria. The Mediterranean aromas enhance one another. A fresh rosé or a light Vermentino also harmonise superbly with this green condimento.

What is a good, affordable wine for pasta?

For everyday drinking we recommend Italian house wines such as Chianti or Pinot Grigio from Tuscany – both affordable and versatile. Creamy sauces suit a Tuscan white, while tomato-based dishes call for a classic Sangiovese. Even on a modest budget, you will find the perfect partner for every pasta dish.
