Information about the drop
This charming Viognier has its roots in vines nearly two decades old, which thrive on the edge of a cool, northern slope 550 metres above sea level. The subsoil on which they are grown is rocky, speckled with clay and limestone. After a gentle pressing and natural fermentation, the wine ages gently in demi-muids for eight months.
Colour
An alluring platinum yellow
Scent
This white wine is truly perfumed, with subtle scents of clover, lemongrass and grapefruit, with additional hints of peach and apricot. Mixed in is a gentle woody note, with hints of butter and pineapple. Compared to many a lush Viognier, this one has a rare finesse, and its fragrance is reminiscent of a ripe Sauvignon Blanc.
Taste
Coolness and warmth come together brilliantly in this wine, supported by an elegant wood note with butter, vanilla and pear aromas. The taste of ripe stone fruit, almonds and liquorice is infused with fresh acidity. Traces of lily of the valley, ripe gooseberries and with a little warming in the glass, a distinct hint of liquorice, round off the aromatic profile. This is a smooth, creamy wine with a voluminous body that can beautifully support a strong culinary accompaniment.
Food recommendations
Try it with lobster tail in a saffron foam sauce or a rustic terrine of fat jelly with apricots and lemon thyme compote. A combination with lemon garlic chicken would also be extremely tasty.
