The Tonsur comes from the Oberplatten vineyard in Ritten. The blend consists of about two-thirds Müller Thurgau, with Weissburgunder (Pinot Blanc), Chardonnay and Silvaner making up the rest, and is situated on the border between an alpine and Mediterranean climate on volcanic soils. The grapes were harvested crisp and macerated together with 50% combs. After six days of maceration in concrete, it is drawn off once and then sits on its lees in concrete until April. Then it is bottled and goes on sale in June.

 

Color

Strong yellow with silky opacity.

 

Nose

The 2020 Tonsur from Martin Gojers Pranzegg is powerful with a distinctive spiciness. Acacia honey, white pepper, long chamomile tea and mace structure the expansive nose. This is followed by stewed apples, dried quince, orange zest and again spicy aromas of dried meadow flowers.

 

Mouth

On the palate, the tonic is controlled by the delicate tannin input from the grape skins and crests and is reminiscent of long drawn Darjeeling tea with a hint of chamomile and a dash of orange blossom water. The fruit rather shows in the extract and serves itself to the overall structure of the wine, whose fine acidity provides vibration and high-frequency refilling.
