Wine Description for Ciringa Pruh 2019 by Tement

Colour & Appearance
Radiant, intense golden yellow – a wine that visually announces its 46 months of barrel ageing.
Nose
Here the terroir speaks a clear, unvarnished language. Wet stones, damp gravel and a salty sea breeze dominate – not a loud varietal aromatic spectacle, but cool minerality. Beneath this, classic Sauvignon notes unfold: elderflower, gooseberry skin, lime zest and lemongrass, interwoven with a vegetal, green freshness.
Palate
Exceptionally disciplined and precise. This wine is like a perfectly tailored suit – everything fits, nothing is excessive. The texture is firm and grippy, carried by a ripe, vibrant acidity that electrifies the wine. Mineral tension meets silky smoothness, the 46 months on fine lees lend it a creamy depth without compromising the freshness. Every element seamlessly integrates with the next.
Finish
Long, cool and of cathedral-like clarity. The minerality resonates like the sound of a bell, accompanied by saline notes and citrus freshness.
Terroir & Origin
The Pruh parcel, a former quarry in the Ciringa site (340-480m), lies directly next to the legendary Zieregg site. The coral limestone soils with fossilised marine creatures, flysch and opok marl fundamentally shape the character of this wine – one can taste the geological history of Südsteiermark.
Grape Variety & Vinification
100% Sauvignon Blanc, spontaneously fermented after extended skin contact and aged for 46 months on fine lees. Bottled unfiltered – an uncompromising, artisanal approach that requires patience and courage.
Food Pairing Recommendations
Oysters with redcurrants, char in elderflower stock, smoked rabbit with gooseberry-fennel confit. Also excellent with goat’s cheese or smoked trout.
Special Features
A Sauvignon Blanc that places terroir above variety – radical, patiently matured and of impressive ageing potential. At just 12.5% alcohol, a masterpiece of balance.
