The north-facing exposure ensures cool, slow ripening – a guarantee of freshness and tension. The soil of limestone and clay shapes the wine’s unmistakable minerality.
- Grape Variety & Vinification
- Chardonnay from vines averaging 20–25 years old, farmed according to biodynamic principles. Vinified using whole-bunch pressing and spontaneous fermentation; subsequently aged for around eleven months – 80% in stainless steel tank, 20% in used oak barrels. Bottled without fining or filtration: artisanal integrity in every bottle.

- A natural food companion. Excellent with grilled turbot with beurre blanc, scallops on pea purée or a classic Poulet de Bresse à la crème. Equally convincing with mature Comté or a simple Quiche Lorraine – Burgundy in its purest form, without detours.

- The parcel has been owned by La Soufrandière since 2016, one of the Mâconnais’s most convincing advocates of biodynamic winemaking. This Saint-Véran is not a loud wine – it is one of those quiet, precise Chardonnays that reveals more of itself with every glass.
