- 100% Chardonnay, hand-harvested on 2 September 2022. Spontaneous fermentation following whole-bunch pressing, 17 months ageing in used barrels and neutral vats. Complete malolactic fermentation, minimal sulphur (21 mg/l total sulphur). A textbook example of natural, respectful winemaking.
