Wine overview
This is a Pinot Gris, usually offered as a second wine from the Clos Windsbuhl. Occasionally we may add small quantities from other sites, depending on which wines we choose in a particular season. The old Pinot Gris vines from Windsbuhl that we use date back to the 1960s or even earlier. When we took over the Clos in 1987, we had to replace some vines and filled in the gaps with new Pinot Gris vines. These younger vines do not find their way into the Clos Windsbuhl, but are all used in this blend.

Maturation information
The character of the vineyard is retained to a great extent and shapes the acidity, elegance and fresh taste. However, there is also the danger of a slight residual sweetness if the ripeness has progressed too far. Thus, the right harvest time plays a decisive role, and the Pinot Gris convinces with its fast development, something that was achieved excellently in 2018. We were able to ferment a dry wine from extremely healthy grapes.

The dense golden yellow is sparkling and luminous.

Aroma
The Pinot Gris Roche Calcaire from 2018 focuses on complexity and pronounced spicy aromas reminiscent of cinnamon, cardamom and vanilla bean. With sufficient contact with oxygen, additional notes of orange, orange zest, baked apple, plums and preserved grapes develop. Fine cedar wood and smoky notes round off the multi-faceted olfactory profile, which convinces with its surprising freshness.

Taste
The freshness also dominates on the palate. Due to its acidity, the wine seems invigorating and never heavy. Its fruit is juicy and charming, and the finish is characterised by a piquant spiciness - a wine that is ideal to combine with a variety of dishes, especially those that contain nutty and spicy elements.
For optimal enjoyment, the wine should, if possible, be decanted and served in large glasses.
