When Arianna Occhipinti began to produce wine in Vittoria, she soon came across the centuries-old trees of the Piraino district in Chiaramonte Gulfi. In addition to wine, she also began to produce oil, the production of which marks the end of the grape harvest and the beginning of autumn every year. Panta Rei is produced from the Tonda Ilbeia variety. The olives come from trees that are several hundred years old and have been cultivated using the umbrella net system. The olives are harvested by hand in the second half of October and the oil is extracted in a continuous cold cycle. The robust oil is stored in stainless steel containers and is suitable for both cooking and eating raw.

Light green with golden reflections.
Nose
The vegetal notes show their intensely fruity side on the nose of yellow tomatoes, yellow peppers and some avocado. Medium intensity.
Mouth
Creamy on the palate like avocado, with a fruity combination of artichoke and summer squash, followed by a grassy, spicy kickback. A vital, fresh oil with restrained acidity, medium-bodied and persistent on the palate with good length and balanced fruit in a slightly grassy finish.
