Wine Description for Olla Blanc VdF 2024 by Matassa

Colour & Appearance
Distinctly cloudy, this natural white wine presents itself in a fascinating orange to copper tone – a visual fingerprint of the skin contact and Matassa’s uncompromising natural wine philosophy.
Nose
Expressive yet ethereal, a fascinating play of aromas unfolds: elderflower meets grapefruit zest, joined by nutmeg notes and exotic hints of mango, papaya and pineapple, reminiscent of hoppy aromatic yeast. Apricot and mirabelle plum round out the bouquet – everything light and airy, as if a sparkling lemonade had been captured in the glass.
Palate
The zesty freshness continues on the palate, but is grounded by skin fermentation with fine tannins and a noticeable grip. Juicy, vibrant and tonic, the wine displays a herbal austerity, liquorice notes and zest. The interplay between lightness and substance is masterfully executed – at just 10.5% alcohol, the Olla Blanc practically floats across the palate without losing its moorings.
Finish
The finale surprises with a pronounced salinity that perfectly balances the wine and lingers memorably.
Terroir & Origin
The grapes come from reclaimed vineyards at an impressive 500 to 600 metres altitude in Roussillon. The soils of calcareous clay with high iron content lend the wine its mineral precision and tension.
Grape Variety & Vinification
A fifty-fifty blend of Muscat à petits grains and Macabeu. Hand-harvested early in the morning in small crates, followed by spontaneous whole-bunch fermentation in stainless steel, then eight months on the lees in 2,000-litre concrete tanks. Bottled unfiltered, unfined and without added sulphites – pure natural wine expression.
Food Pairing Suggestions
Perfect with oysters, ceviche, goat’s cheese, grilled fish or Asian dishes with lemongrass and coriander. Also a revelation with fennel salad with oranges or mussels in white wine.
