The grapes for Grüner Veltliner Natural come from the Gabrissen vineyard, an old vineyard on Vienna's Bisamberg. The sunny south-facing site is characterised by loess and has sandy, light soils with good lime content. The grapes were selectively harvested by hand and macerated in stainless steel tanks, where spontaneous fermentation also began. The wine remained on the skins for four months. In the following February, it was drawn off the skins and matured without pressing for another six months before being bottled unfiltered and unfined.

Nose
The nose of the 2022 Grüner Veltliner Natural by HajszanNeumann needs air, so put it in the carafe! At first it appears shy, whispering of fermentation and naturalness, until it gathers itself and confidently emerges as a valid wine. Notes of almonds, yeast plait and dried apples outline its aromatic appearance, followed by a pot of herbal tea, until small yellow pears and dried quinces have their say. A kaleidoscope in constant change.
Mouth
The aromatic guard rails are laid down by the animating tannins from the long maceration period. Fine-grained like small-calibrated sandpaper, it is tartly contoured on the palate, with the crumbly fruit of cut apple slumbering underneath, underpinned by delicate orange notes in the overtone range. Reminiscent of long Darjeeling, a haptic experience with aromatic depth and versatile use at the table.
