Wine Description for Morillon Muschelkalk 2023 by Tement

Colour & Appearance
Luminous straw yellow in the glass, clear and brilliant – a wine that announces its freshness and vibrancy visually from the outset.
Nose
This Morillon demands patience and air to unfold its full potential. But then it reveals itself from its most elegant side: fresh and crisp apples with skin, ripe pears, exotic star fruit and a whisper of white melon. These are joined by citrus notes, a fine smoky tone and the mineral presence of stone dust – an aromatic interplay between fruit and stone.
Palate
On the palate, a fascinating texture unfolds: vibrant, juicy and carried by an elegant acidity that harmonises perfectly with a creamy yet fine-grained structure. You sense a subtle tannic presence that gives the wine grip and definition. Here the South Styrian interpretation of Chardonnay reveals itself in its purest form – powerful and characterful, yet never losing its finesse. The acidity is delicately woven throughout, the wine possesses a distinctive identity that renders any Burgundy comparison superfluous.
Finish
The aftertaste is long and mineral, with a lingering freshness that invites the next sip. The Muschelkalk soils leave their saline signature right to the end.
Terroir & Origin
The grapes come from the premium vineyard sites Zieregg, Sulz, Wielitsch and Ottenberg in South Styria. The Muschelkalk, calcareous marl and clay soils impart the wine’s characteristic minerality and structure. Vines aged between 10 and 40 years provide complexity and depth.
Grape Variety & Vinification
Spontaneous fermentation in large wooden cask, slow fermentation to 2.8 grams residual sugar at 7 grams acidity. Subsequently 15 months maturation on fine lees in large wooden cask. Bottled unfiltered – a wine that prioritises authenticity over cosmetics.
Food Pairing Recommendations
Perfect with Arctic char, pan-fried turbot, scallops or calf’s sweetbreads. Also an excellent choice with mature Comté or Alpine cheese.
Special Characteristics
A Chardonnay with an Austrian soul – reduced alcohol at 12.5% vol., maximum expression. Tement’s signature is unmistakable: precision, elegance and terroir transparency.
