Terzavia means "the third way" and, after Marsala and dry Grillo, is an interpretation that takes the island's dynamism and raises the grape variety to a whole new level - French tradition with a strong Sicilian personality. Made according to traditional methods, this spumante is 100% Grillo and has been bottled non Dosé.

The grapes for this sparkling wine are harvested from the second week of August, manually selected and then cooled. A direct gentle pressing of the whole grapes follows and after a natural decantation of the must, fermentation begins with natural yeasts in stainless steel tanks, 20 % of the grapes are fermented in French oak at controlled temperature. The tirage is done with fresh must instead of sugar, then the wine is aged on its own lees for at least 18 months.

Nose

Marco de Bartoli's 2020 Terzaviva opens with light brioche on the nose, followed by salt-buttered toast, crushed oyster shell and ripe yellow apple. It oscillates between mellow fruit, delicate autolysis and distinctly saline notes, a distinctive characteristic of de Bartoli's wines. Tangerine, orange blossom, some linseed oil, white bread and again salty notes make us more than eager for the third way of this Grillo Bollicine.

Mouth

Very dry with a fine mousseux on the palate, it is initially marked by autolysis. With increasing aeration, the mellow fruit notes, yellow apple, a little quince as well as roasted and salted hazelnuts emerge. Toasty toast, warm butter and orange marmalade are captured on the palate by the delicate phenolics that give it extra pace. Multi-layered and punchy, the Grillo not only opens the way to the land of sparklers, but also puts Sicily on the map as a sparkling wine destination.
