- Colour & Appearance
- Dense, saturated cherry red with delicate violet reflections and a warm, harmonious core – visually already a promise of concentration and maturity.
- Nose
- Breathtakingly dense and yet of remarkable precision. A broad spectrum of dark fruit: sweet cherry, blackberry, morello cherry, plum, complemented by earthy notes of beetroot and a fine tomato trace. Roasted aromas of coffee at first crack, dark chocolate and liquorice meld with perfectly integrated oak notes of vanilla and coconut. Spicy-ethereal accents of eucalyptus, rosemary, thyme and black olive run through the nose, along with pepper, juniper and clove. The undergrowth spectrum with pine needles, pine cones and tree bark rounds out the complex picture – powerfully Spanish, yet with remarkable finesse.
- Palate
- Here the true greatness of this wine reveals itself: enormous harmony with palpable power. The warm, present fruit unfolds in layers, whilst the tannin, perfectly integrated, gently lines the palate – neither bitter nor austere, but rather melting. Fruit, tannin, acidity and spice interlock seamlessly and create a deep sense of balance and timelessness. Despite 15% alcohol, the wine is remarkably accessible and fresh, powerful yet sovereignly serene.
- Finish
- Present for minutes with enormous length. In the aftertaste, umami spreads, the fruit hovers and remains clear and invigorating – a great sip that doesn’t want to end.
- Terroir & Origin
- From the extreme high-altitude vineyards of Toro, where the autochthonous Tinta de Toro thrives in small goblet-trained vines. The parcels date from 1900 and 1960 and have been farmed organically since 2002.
- Grape Variety & Vinification
- 100% Tinta de Toro (local Tempranillo clone). Fermentation in open stainless steel tanks under controlled oxidation, followed by 24 months ageing in French oak barrels. The high alcohol content is flawlessly integrated – outstanding cellar work.
- Food Pairing Suggestions
- Braised ox cheeks, roasted lamb shoulder, wild boar stew, aged Manchego or Ibérico ham. Also an excellent choice with beef fillet with truffle jus or duck breast with cherry sauce.
