Wine Description for Rosé vom Spätburgunder 2023 by Klaus Vorgrimmler
- Colour & Appearance
- Brilliant pomegranate red with luminous pale and orange reflections – a rosé that clearly distinguishes itself from Provençal paleness and doesn’t deny its Baden origins.
- Nose
- Intense and multi-layered: wild berries dominate with wild raspberries and strawberries, underscored by sour cherry and redcurrant, which add varietal character. These are joined by bergamot and kaffir lime, bringing tart freshness. In the background, clove and cinnamon add subtle spice, whilst dried Mediterranean herbs – thyme, sage, rosemary – provide aromatic complexity.
- Palate
- Here we see the signature of a winemaker who consciously works against the mainstream. The wine dances light-footedly, yet with earthy spice and taut structure. The fruit presents itself more restrained than on the nose, almost like cream cherry sweets with lactic notes. A cool, linear minerality runs through the wine – actually more Provence than classic German Spätburgunder rosé. Positive bitter compounds on the palate encourage the next sip and lend the wine drinkability and character.
- Terroir & Origin
- The vines are rooted in loess soils over Dogger and Jurassic limestone from the Middle Jurassic period (180-159 million years old). Vorgrimmler’s unconventional approach: continuously planted for 40 years, unworked for years, with over 80 plant species for maximum biodiversity. The KV pruning method reduces yields to moderate 30-40 hl/ha.
- Grape Variety & Vinification
- From an old parcel, harvested early for freshness and acidity. Brief skin contact in 2023, gentle pressing without phenolics and bitter compounds. Spontaneous fermentation at 18°C in stainless steel tank, completely additive-free, using his own yeast starter. Malolactic fermentation, maturation on fine lees. Minimal sulphur only before bottling. No sulphur in the vineyard, instead teas, minimal amounts of copper and baking powder.

- Grilled tuna, salmon tartare, vitello tonnato, antipasti with grilled vegetables, goat’s cheese, bouillabaisse, tapenade or ratatouille – anything that benefits from Mediterranean spice and freshness.
