The In Quietud by Nature from 100% Tinta de Toro comes from vineyards planted between 2000 and 2004. Planted as bush vines, the vines are not irrigated and have since been farmed organically. The vineyards are worked with horses, the grapes are harvested by hand and produced without any cellar aids or noticeable new wood.

At the winery, the grapes are destemmed and pressed and then ferment spontaneously in temperature-controlled stainless steel tanks. During the two-week maceration, they are pumped over twice a day for gentle extraction. During the Castilian winter, the unsulphured wine matures in large wooden barrels on the fine lees until it is bottled unsulphured after the following summer.

The 2020 In Quietud by Nature from Quinta de la Quietud is an open book of black cherries, blackberries and mulberries on the nose, complemented by fully ripe plums. On top, a distinctive ethereal note of aromatic herbs, thyme and sage flickers like the hot asphalt on the horizon, along with delicate citrus notes of freshly ground white pepper. The pure fruit of the Tinta die Toro is expressed here undisguised in all its power and fullness.


The In Quietud by Nature promises nothing on the nose that it is not capable of delivering. It opens with rich, black-purple fruit on the palate and lines the palate in an uncompromising and all-encompassing way. Aromatically, the nose mirrors and shows itself structurally a little rough-around-the-edges, but unshakeable. The tannins oscillate between fine-grained and medium-grained, which gives it its distinctive grip and thus its distinct charm. Animating with a certain ethereal coolness in the aftertaste, the acidity operates precisely in the background, while the stage belongs to the boundlessly hedonistic fruit and the fleshy tannins.
