  • The Vinudilice Rosato 2023 from I Vigneri di Salvo Foti is an extraordinary Sicilian rosé from Mount Etna’s highest vineyard site at 1,200 metres elevation. Crafted from at least ten different white and red grape varieties and vinified biodynamically, this characterful wine displays a complexity and intensity that far transcends classical rosé wines.
  • 🎨 Colour: Intense rosé with violet reflections, tending towards a lighter red wine
  • 👃 Aroma: Extraordinarily intense and captivating with cool stones, graphite, wild strawberries, figs, raspberries and watermelon; herbal bouquet of fresh thyme, sage, wild mint through to tarragon; delicate notes of light tobacco
  • 👅 Palate: Pronounced with red berry, acid-driven fruit, striking salinity and fine tannins; requires air and decanting to unfold its full potential; long, characterful finish
  • 🎭 Character: Distinctive, intense and demanding – a rosé of quite another kind that challenges both tasters and food; characterful as its creator Salvo Foti; still young and capable of development
  • 🍽️ Food Pairing: Wild herb salad with pomegranate and gratinéed feta, linguine with prawns and melted tomato, roast veal with sage and orange sauce
  • ✨ Special Features: From Mount Etna’s highest vineyard site (1,200m), over one hundred year old mixed-variety vines, biodynamic viticulture, natural vinification with indigenous yeasts, minimal filtration, no added sulphites, only 3,000 bottles; awarded as “Extreme Wine”

Wine Description for Vinudilice Rosato 2023 by I Vigneri di Salvo Foti

Colour & Appearance
Intense rosé with violet reflections, which already visually hints at its proximity to red wine – a rosato that redefines the boundaries of the category.
Nose
An extraordinarily complex, captivating aromatic profile, which in 2023 proves particularly intense. Mineral notes of cool stones and graphite meet a kaleidoscope of red fruits: wild strawberries, raspberries, figs and watermelon. Added to this is an impressive herb spectrum ranging from fresh thyme, sage, wild mint to tarragon, rounded off by fine notes of light tobacco.
Palate
Pronounced and still somewhat closed in its youth – this wine demands patience and absolutely requires decanting. After sufficient air contact, acid-driven red fruit, striking salinity and fine tannins unfold. The structure is more reminiscent of a light red wine than a conventional rosé. A characterful, demanding wine at the beginning of its development, which challenges both tasters and food pairings alike.
Finish
Long, mineral-fruity aftertaste with pronounced salinity and fine tannin structure.
Terroir & Origin
From the vineyard site VignaBosco in Bronte on Mount Etna West – at 1,200 metres the highest vineyard on Mount Etna and presumably throughout Italy. Volcanic terrain with extensive lava plateau, deep, skeletal soil. Over a hundred-year-old field blend with at least ten different white and red grape varieties growing together.
Grape Variety & Vinification
Field blend of Minnella, Alicante Rosé, Grecanico and other indigenous varieties. Biodynamic viticulture, hand-harvested in late October/early November. Whole bunch pressing, static must clarification, fermentation with indigenous yeasts in stainless steel tank. Minimal filtration, no sulphur added at bottling in May. Only 3,000 bottles from 5,000 litres yield per hectare.
Food Pairing Suggestions
Wild herb salad with pomegranate and gratin feta, linguine with prawns, melted tomato and thyme, veal roast with sage and orange sauce.
Special Features
Selected by PropositionVini as an Extreme Wine. The name derives from the oak forests (Latin Quercus Ilex) – Vinudilice means “wine of the forest of the holm oaks”. An uncompromising, characterful rosé that bears the signature of its legendary winemaker Salvo Foti.
