The Into the Light - White Blaufränkisch is a directly pressed Blaufränkisch, i.e. a Blanc de Noir from grapes grown on limestone and slate. After spontaneous fermentation, it was aged on its lees in large wood and in cellar amphorae and bottled unfiltered, unfined and without the addition of sulphites.
It forms a pair with the Out of the Dark - Blaufränkisch 2021/22 and with the name he refers to the eighth and penultimate album by Falco called Out of the Dark . The label was designed by Olaf Osten.
Color

Nose
Into the Light is what Gernot and Heike Heinrich call their more or less white-pressed Blaufränkisch, which actually strives towards the light and wants to go up into the ethereal. It smells wild, fresh and lively with notes of crisp as well as crumbly apples and some beeswax together with hops, some fennel pollen and pear cream. On top of that, there is a fine hint of volatile acidity.
Palate
On the palate the White Blaufränkisch juicy and mouth-filling, it is full of energy and liveliness so that you just want to drink it. It tastes of cloudy juice from various pome fruits with lots of citric acidity, a little cider, hops and a good dose of salt. There is also a wonderful creaminess that lines the palate and sets up a successful interplay with the acidity and minerality. There is real power in it, but just in a silky shell. At the end, you want to lick your lips because there is just as much salt left on them as after a swim in the Mediterranean. A real pleasure!
