Tasting note
Character
A monumentally crafted Cabernet Franc from a magnum, impressing with uncompromising power, immense fruit concentration, and remarkable structure. The signature style of star oenologist Luca D’Attoma is displayed in the lavish richness of this flagship wine, often regarded as Tuscany’s answer to Cheval Blanc. Despite its imposing body, the wine maintains remarkable longevity and poise. Ageing in large format provides the ideal conditions for a highly promising, decades-long evolution in the cellar.
Terroir & Origin
The grapes originate from the biodynamically farmed amphitheatre vineyard near Riparbella, situated at an altitude of 250 to 300 metres near the Tuscan coast. This strategic location north of Bolgheri combines balancing sea breezes with continental influences. Across the twelve hectares of this Demeter-certified estate, the wine reflects the pure energy of this Maremma terroir, shaped by uncompromising nature conservation in the vineyard.
Grape Variety & Vinification
This single-vineyard wine is made from 100% Cabernet Franc and embodies a radical philosophy of minimal intervention. In accordance with Demeter guidelines, ageing takes place naturally using concrete, terracotta, and amphorae. As the wine is neither fined nor filtered, it retains its unadulterated density and structure. The 2021 vintage fully showcases the ageing potential of the grape variety alongside D’Attoma’s artisanal signature.
Food Pairing
Due to its impressive stature and concentrated nature, this wine demands intensely flavoured, classic meat dishes. It is the perfect accompaniment to Bistecca alla Fiorentina, braised wild boar ragout, or slow-braised ox cheek. The Cabernet Franc also holds its own effortlessly alongside aged Pecorino Toscano.
