Wine Description for Chablis AOC 2023 from de l’Enclos

Colour & Appearance
Luminous lemon yellow in the glass, clear and brilliant – a visual promise of freshness and vibrancy.
Nose
Surprisingly expressive for a classic Chablis: the nose initially recalls an Sancerre with its intense citrus fruit. Lemons and limes dominate, accompanied by blackcurrant and freshly cut grass. Behind these unfold finer nuances of lemon tart, mint, almond and that characteristic chalk which makes the Kimmeridgian terroir so distinctive.
Palate
On the palate, the true personality of this Chablis reveals itself: a fine, precise acidity meets a delicate, almost creamy texture – a balance that defines elegance. The herbal notes and citrus from the nose continue, but are complemented by crisp stone fruit. The chalky minerality lends the wine a refined, almost powdery texture that caresses the palate without dominating.
Finish
Medium-length and refreshing, with lingering citrus fruit and a fine mineral echo that invites the next sip.

Over 15 hectares of vineyards around Chablis, La Chapelle and Beine provide the grapes for this wine. The Kimmeridgian and Portlandian limestone soils shape the characteristic mineral fingerprint that distinguishes Chablis from other Chardonnay regions.
Grape Variety & Vinification
100% Chardonnay, hand-picked and directly pressed. Spontaneous fermentation in stainless steel tanks preserves the primary fruit, whilst ageing in classic multi-year wooden barrels imparts complexity and that subtle creaminess without overwhelming with oak notes. Lightly filtered and sulphited.
Food Pairing Suggestions
A classic companion to oysters and seafood, but also excellent with goat’s cheese, pan-fried sea fish, scallops or a light poultry terrine. The acidity cuts effortlessly through butter sauces.
