Wine description for Cuvée perpétuelle RP21AB Inédite Non Dosé 1500ml Magnum by Bonnet-Ponson

Character
A Champagne of radical clarity: without any dosage, with zero grams of residual sugar, scarcely imaginable drier. The Cuvée Perpétuelle follows the principle of a solera – drawn and replenished year after year, with the oldest component dating back to 2004. Thus emerges a wine composed of many vintages, uniting depth and maturity with taut freshness. It displays tension, minerality and a fine, almost saline length – a Champagne for those who prefer substance over sweetness. The magnum bottle grants it additional time and tranquillity for development.
Terroir & Origin
Cyril Bonnet cultivates around ten hectares, spread across approximately 50 plots in Chamery, Vrigny, Coulommes-la-Montagne as well as the Grand Cru vineyards of Verzenay and Verzy on the Montagne de Reims. The vines are between 35 and 80 years old. The house has existed since 1862, when Grégoire Bonnet established one of the region’s first Récoltant-Manipulant estates; his grandparents carved the cellars through the sandy soil of Chamery using only shovels and pickaxes. Since 2016, the estate has been organically certified.
Grape Varieties & Vinification
Pinot Noir, Pinot Meunier and Chardonnay – the classic trio of the Montagne de Reims, with the two Pinots setting the tone. Each plot is vinified separately, and fermentation takes place spontaneously with wild yeasts. One third of the base wines mature in old oak casks, the remainder in stainless steel tanks – not to impart woody notes, but to build texture. Sulphur is used only in minimal doses, and dosage is entirely omitted here: Non Dosé, pure and unadorned.
Food Pairings
The lean, taut character of this Champagne calls for cuisine with precision: oysters and raw seafood, sole in butter, smoked fish or local goat’s cheese. It also proves assured alongside Comté, Chaource or a simple roast chicken. A wine that truly comes into its own at the table – not merely as an aperitif ornament, but as a serious companion throughout the entire meal.
