Tasting note
- Colour & Appearance
- Pale straw yellow with fine, vibrant highlights and a persistent, elegant mousse.
- Nose
- Fresh, delicate and extremely inviting. It reveals a multi-layered interplay of fruit featuring mirabelle plum, persimmon, peach, as well as yellow pear and quince. Subtle notes of almond, lemon balm, lemon thyme and delicate hints of pastry and yeast lend vertical depth.
- Palate
- Light-footed and tightly structured on the palate. The fine mousse imparts vitality and a delicate creaminess to the wine, without any heaviness whatsoever. Lean, crisp and full of tension, free from any cloying, sugary sweetness.
- Finish
- A clear, focused finish with pronounced freshness and a chalky, salty trail that lingers naturally.
- Terroir & Origin
- The grapes originate from the heart of Puligny-Montrachet in the Côte de Beaune. The estate of Jacqueline and Matthieu Collardot stands for an uncompromising expression of origin and pure, unadorned elegance.
- Grape Variety & Vinification
- A classic cuvée of Pinot Noir, Chardonnay and Aligoté (12.0% ABV). Certified organic since 2021, the estate largely dispenses with added sulphur and relies on a gentle approach without fining.
- Food Pairings
- Superb as an uncompromisingly dry aperitif, alongside oysters, scallops or fine prawn crostini.
- Key Features
- Certified organic sparkling wine from a tiny 2.5-hectare estate. A crystal-clear Burgundy Crémant that reflects the domain’s artisanal signature in sparkling form, boasting zero confectioner’s sweetness and a salty density.
