Tasting note
Wine information
Les Picasses is a cuvée from clay-limestone on yellow limestone, which, as the name suggests, comes from the famous Les Picasses vineyard in the municipality of Beaumont-en-Véron. Three quarters of the vines on the 1.8 hectares are 20 years old, but a quarter are already around 84 years old. Fermentation takes place in cement vats, followed by malolactic fermentation in barrels. The wine is then aged for twelve months in oak barrels, one third new, one third second-use and one third third third-use. The wine was bottled unfined and unfiltered with little sulphur.
Colour
deep purple
Nose
The 2020sChinon Les Picasses is a matured late release and offers a dense aroma of plums, sweet cherries, cassis and elderberries in combination with some balsamic vinegar, liquorice, wild herbs, a few raisins and sweet notes from the discreetly used wood.
Palate
On the palate, the Cabernet Franc is ripe and silky with a dense texture and a fleshy fullness of dark fruit. The acidity is also ripe and silky, but present. The Chinon has a good length, the tannin appears quite dry, but is coated by the dense, dark fruit.
Food pairing suggestions
- Roasted salmon on a bed of beetroot with herb vinaigrette (fish)
- Mushroom burger with Roquefort sauce (Vegetable & Vegetarian)
- Veal kidneys with artichokes in Madeira sauce (meat)
