Wine Description for Chassagne-Montrachet 1er Cru Les Baudines AOC 2023 by Thomas Morey

Colour & Appearance
Medium straw yellow with a distinctly green tinge, which underscores the youthfulness and freshness of the vintage.
Nose
A perfectly balanced blend of ripe and cool aromas characterises the bouquet: carambola, lemon, greengage and pineapple meld with buds and white flowers. The bouquet displays appealing intensity with a fine reduction, minimal wood imprint and subtle vanilla.
Palate
Typical of Thomas Morey: precise and clear, bright and fresh, comparatively taut. The wine shows itself clearly defined with a precise acidity that is ripe for the vintage yet clean. Piquant and lively, with subtle reduction, it becomes charming through a fine extract sweetness.
Finish
The finale combines the charming extract sweetness with a very mineral character, which impressively underscores the provenance from the uppermost part of the hillside.
Terroir & Origin
Les Baudines lies at the southern end of Chassagne-Montrachet at the uppermost part of the hillside, in direct proximity to Les Embazées and the Santenay district. The white soil with considerable depth gives the wine its characteristic minerality.
Grape Variety & Vinification
100% Chardonnay, fermented with indigenous yeasts in a combination of neutral barrel and tank. Malolactic fermentation proceeds naturally, the wine matures on the lees without bâtonnage. Approximately 20% new oak. Noteworthy: sulphuring only in the final six months with minimal doses (never more than 35 mg/l in total) – a commitment to natural winemaking.
Food Pairing Recommendations
Perfect with scallops, lobster or langoustines with butter. Also an excellent companion to pan-fried turbot, poularde with morels or Comté and Beaufort cheeses.
Special Features
Thomas Morey ranks among the most precise winemakers in Chassagne-Montrachet. His wines are characterised by clarity and restraint – a counterpoint to opulent Burgundies. The 2023 Les Baudines embodies this philosophy perfectly.
