The Clos du Moulin aux Moines vineyard is located in an old Cistercian monastery and looks back on a history of over 1000 years. In the middle of the Côtes de Beaune, it is located between Meursault, Puligny-Montrachet and Chassagne-Montrachet. The Domaine Clos du Moulin aux Moines, under the direction of Willy Roulande, cultivates vineyards in Pommard, Monthelie and Auxey-Duresses according to the guidelines of biodynamics. The top priority is to bring the quality from an intact ecosystem as gently as possible into the cellar and then onto the bottle.
All work in the 15 hectares of vineyards is done by hand, and the vineyard work is done with horses instead of machines. The vines are on average about 40 years old and the yields are relatively low at just over 30 hectolitres. In the cellar, the musts are carefully matured in large casks, as they are increasingly moving away from small barriques in order to express the delicate character of the wines as unadorned as possible. The wines are fermented spontaneously with their own yeasts in concrete and then aged with as little new wood as possible. Wines with transparent fruit and delicate vibration outline the style of the domaine.

Nose
The overture is accompanied by a pleasant ornament of mild spices such as long red pepper, cloves, allspice and fine woody notes reminiscent of sandalwood. This strikingly spicy cadastre is underpinned by an almost cheeky red berry fruit including cherry pit and baskets of dark mulberries. Overall, the wine is on the juicy, fruity side with top extract and fine spicy framing.
Mouth
On the nose, the 2020 Bourgogne Clos de la Perrière Monopole from Clos du Moulin aux Moines picks up speed and is fuelled by tightly woven tannins that underpin the stimulatingly tart aromas with fine phenolics and contour the drinking pleasure with youthful, woody guardrails. On the mid-palate, the tannins blossom into purple velvet, crowned by ripe fruit and framed by agile acidity. Stringent with clear contours and good length, it offers first-class Burgundian understatement for a shockingly affordable budget.
