Wine Description for Saint Romain „Combe Bazin“ Blanc AOC 2021 from Clos du Moulin aux Moines

Colour & Appearance
Radiant, medium straw yellow – clear and luminous in the glass.
Nose
This Chardonnay captivates through its restrained elegance rather than loud expressiveness. Limes, lemons and the exotic note of calamansi dominate, complemented by citrus zest and pithy nuances. These are joined by white peaches and yellow apples in crisp freshness. The mineral component of stone and a hint of hazelnuts lend depth to the bouquet, whilst subtle oak notes underscore its finesse.
Palate
On the palate, a ripe, silky texture unfolds, perfectly balanced by a lively, precise acidity. The citrus notes continue, accompanied by pineapple, herbs and mineral stone. The structure is supple, yet never soft – the acidity keeps the wine taut and inviting to drink.
Finish
The finale reveals increasingly peppery and saline notes that propel the drinking experience. The combination of silky texture and citrus freshness concludes harmoniously and persistently – a wine that invites the next sip.
Terroir & Origin
The vineyard site Combe Bazin is regarded as one of the finest Climats in Saint-Romain: 13.56 hectares with south-westerly exposure and characteristic chalky-white soils that lend this Chardonnay its mineral precision and freshness.
Grape Variety & Vinification
100% Chardonnay, selectively harvested and slowly pressed as whole bunches. Fermentation takes place with indigenous yeasts in wooden vats, with one year of ageing in Pièces and Tonneaux using a maximum of 15% new oak. Bottled unfiltered, unfined and with minimal sulphur – an authentic, artisanally crafted Burgundy.
Food Pairing Suggestions
The citrus freshness and minerality harmonise beautifully with smoked salmon with citrus cream, trout ceviche with citrus fruits and nuts or the Burgundian classic Œuf en meurette. Also an excellent choice with goat’s cheese or grilled fish.
Special Characteristics
A prime example of precise, terroir-driven Burgundy Chardonnay away from the big names – with impressive value for pleasure and the courage to employ minimalist cellar techniques.
