Wine Description for Petit Aigle Bourgogne Chardonnay – Élevé en Fût AOP 2023 by Boris Champy

Colour & Appearance
Medium straw yellow with brilliant clarity – a classic appearance for Burgundian Chardonnay.
Nose
Open and inviting, this Bourgogne Blanc presents an elegant bouquet of white and yellow peaches, green pears and lemon cream. Beneath these lie mineral nuances of stone dust and graphite, along with fine notes of almonds – a beautiful marriage of fruit and terroir.
Palate
On the palate, the wine delivers exactly what one expects from a well-crafted Burgundy: verve, freshness and juiciness. The blend of yellow and white fruits is carried by a vibrant acidity, whilst a fine texture with a hint of tannin gives the wine structure. The oak remains discreetly in the background – perfectly balanced.
Finish
The finish turns slightly saline, develops spicy accents and a chalky minerality that lingers persistently on the palate. A clear statement of its Burgundian origin.
Terroir & Origin
The grapes come from Ecocert-certified vineyards on south-facing slopes with soils of limestone, pebbles and clay – an ideal combination for expressive Chardonnay with a mineral backbone.
Grape Variety & Vinification
Boris Champy works with a purist approach: following hand-harvesting, whole bunches are pressed directly and fermented spontaneously with indigenous yeasts. Ageing takes place 100% in neutral oak barrels on the lees for 11 months – a method that adds complexity to the wine without overwhelming it with oak.
Food Pairing Suggestions
A versatile companion to grilled fish, scallops, poultry in cream sauce or goat’s cheese. Also an excellent choice with mushroom risotto or pasta with cream sauce.
Special Features
An unpretentious, agile Burgundy from a respected producer – Boris Champy’s négociant series Petit Aigle proves that authentic Burgundian Chardonnay need not cost the earth. Crafted with care, terroir-focused and displaying the characteristic Burgundian character.
