Tasting note
Character
This Pinot Noir bears the signature of a true intellectual of viticulture. Here, Boris Champy delivers a delicate, vibrant structure to the glass, supported by a remarkably fresh backbone. With a moderate 12.5% ABV in the warm 2022 vintage, the wine focuses entirely on elegance and drinkability rather than heavy extraction. The large format (Magnum, 1500ml) also guarantees particularly slow, complex aging.
Terroir & Origin
The prestigious Premier Cru site Aux Coucherias in Beaune benefits from the estate’s holistic approach. As Burgundy’s oldest Demeter-certified estate (since 1984), the Domaine relies on an intact biodiversity with hedges and stone walls surrounding the vineyards. The cooler microclimatic conditions and close-to-nature farming grant the profile of this origin exemplary clarity and natural balance.
Grape Variety & Vinification
100% Pinot Noir, vinified with minimal intervention in the cellar. Champy employs spontaneous fermentation with wild yeasts and extracts gently so as not to overpower the grape variety’s delicate fruit. The subtle use of oak allows the expression of the terroir to take center stage. The result is an extremely fine, dry red wine of artisanal purity.
Food Pairings
Pairs exquisitely with pink-roasted duck breast, classic Boeuf Bourguignon or a tender veal chop with morels. This Premier Cru also reveals its true class alongside fine poultry or aged Comté.
