Wine Description for Blanc de Noir 2025 by M. Schädler – Steffen Mugler

Character
A Blanc de Noir of the finest kind: vinified from red grapes but consistently made as a white wine, this cuvée combines the structural depth of Pinot Noir with the vibrant freshness of Pinot Meunier. With 11.5% abv and a dry finish, it presents itself as light-footed, precise and uncompromising – a wine that prioritises elegance over richness.
Terroir & Origin
The Pfalz is one of Germany’s warmest and sunniest wine regions, protected by the Palatinate Forest to the west and shaped by a mild, continental climate. These conditions favour full physiological ripeness of the Pinot varieties without sacrificing natural acidity – a prerequisite for wines with tension and drinkability.
Grape Variety & Vinification
The blend of Pinot Noir and Pinot Meunier deliberately recalls the classic cuvées of Champagne – yet here interpreted as a still white wine. The must is separated from skin contact immediately after harvest to prevent any unwanted colour extraction. The result is a precisely crafted Blanc de Noir that dresses the aromatic complexity of red Pinot varieties in a white, fresh guise. The Pinot Meunier contributes fruity charm and accessibility, while the Pinot Noir provides backbone and depth.
Food Pairings
Its dryness and moderate alcohol make this Blanc de Noir a versatile companion at the table. It pairs wonderfully with asparagus with Hollandaise sauce, grilled salmon or Flammkuchen with crème fraîche and smoked salmon. It also reveals its elegant side alongside light terrines, goat’s cheese or a summery Vitello tonnato. A wine for the moment – best served well chilled and in good company.
