Tasting note
Info about the cava:
Pansa Blanca (Xarel-lo), Macabeu and Parellada were fermented in steel tanks, the must was then fermented for the second fermentation in the bottle for at least 20 months on the lees and was released directly onto the market without dosage.
Color/Look:
Light golden yellow with green reflections and a broad mousse.
Nose:
The 2020 Alta Alella Mirgin Brut Nature Reserva has an intense aroma of almonds, yeast, smoke and sea salt. With a little oxygen, fruity flavours of pear, citrus, quince and apple are added. An unagitated, very precise and distinctive flavour.
Palate:
Citrusy, salty, refreshing, with a stimulating perlage and chalky influences, it stimulates the palate and demands to be served with food, which it rounds off excellently with its spicy and mineral style.
Food pairing suggestions
- Aperitif with salted almonds and green olives (Vegetable & Vegetarian)
- Fried scallops on seaweed salad(seafood)
- Veal tartare with anchovy cream, capers and parsley (meat)
