Tasting note
Colour & Appearance
Pale straw yellow, luminous, clear, and adorned with a fine perlage.
Nose
A lush, confident opening. Aromas of orange zest, red apple skin, and green almonds combine with noble autolytic notes of yeasty bread crumb and freshly roasted hazelnuts. The play of aromas immediately demonstrates immense presence and artisanal depth.
Palate
On the palate, this Premier Cru glides with elegant dynamism. The juicy, appealing fruit unites with a subtle yeasty note. At a slender 12.5% ABV, power meets vibrancy: an expansive, lively arch of acidity masterfully balances the body and provides unadulterated drinking pleasure.
Finish
Very long, taut, and characterised by a delicate mineral salinity that invites the next sip.
Terroir & Origin
Originates from 1er Cru vineyard sites in Écueil in the Petite Montagne de Reims, farmed organically and according to Demeter biodynamic guidelines. The vine-planted parcels lie directly adjacent to a cooling oak forest on pure limestone soils, giving the wine its focused, mineral core.
Grape Variety & Vinification
A classic cuvée of 85% Pinot Noir and 15% Chardonnay. Following hand-harvesting and spontaneous fermentation with wild yeasts, the base wine matures predominantly in stainless steel, with a portion in oak casks sourced from the local forest of Écueil. After roughly 30 months on the lees, this Extra Brut showcases its taut texture with minimal dosage.
Food Pairings
Pairs excellently with cucumber salad with borage, stale bread, goat’s cheese, and elderflower dressing. Equally impressive alongside smoked mackerel with gooseberry chutney and crème fraîche or a refined pheasant terrine with Cumberland sauce.
Special Features
Matured as a large format (1500ml Magnum), this Champagne from 100% certified Demeter biodynamic viticulture offers an even finer dynamic of ageing. The vinification in oak from the village’s own forest makes the terroir of Écueil completely tangible.
