Colour
Red gold.
Nose
Initially reductive, it opens up quickly to reveal clear citrus fruit, quince notes and Mediterranean herbs. Despite the pronounced fruit, a mineral freshness with good intensity dominates.
Palate
Fresh acidity from start to finish, full-bodied yet not opulent. Fine tannin from skin contact provides grip. Powerful with a spicy character and a silky-creamy texture, leading to a long finish.
Character
Exceptionally drinkable and juicy, a Priorat white of rare freshness and finesse.
Pairing
With asparagus risotto, scallops or simply well-chilled goat’s cheese.
Notes
Natural whole-bunch fermentation with stems and maturation purely in stainless steel tanks minimise external influences and celebrate the grape varieties – making this Priorat so uniquely textured and ethereal.
Tasting note
Colour & appearance
In the glass, the wine displays a luminous red-gold hue, visually hinting at its ripeness and the skin contact during fermentation.
Nose
Initially, a fine, reductive note that dissipates with a little air. Then, the typical aromas of Garnacha Blanca emerge: quince, dried Mediterranean herbs, accompanied by a clear, fresh side of citrus fruit and good intensity.
Palate
An invigoratingly fresh line of acidity from the first moment to the finish. The wine is full-bodied yet not opulent. The fine tannins – a result of skin contact – provide grip on the palate. Energetic, with a silky-creamy texture and remarkable juiciness. It has such a moreish quality that one bottle almost seems too little for two people.
Finish
Spicy and long-lasting, the wine remains present and bids farewell with a pleasant, herbal note.
Terroir & origin
The grapes come from nine villages across the Priorat – a white wine that practically represents an entire appellation. The vines are 35 to 50 years old and are rooted at altitudes of 350 to 800 metres in the region’s poor schist soils. Dominik Huber, who co-founded the estate with Eben Sadie in 2004, is among the earliest to harvest – a contrast to the hot summers that preserves freshness.
Grape varieties & vinification
A blend of 75% Garnacha Blanca and 25% Macabeo, the classic white grape varieties of the Priorat. The grapes are spontaneously fermented as whole bunches – stems included, and ageing takes place exclusively in stainless steel tanks. Since 2009, Huber has relied on whole-bunch infusion rather than extraction: no pigeage, no pumping over the cap.
Food recommendations
A versatile companion to asparagus risotto – where the creamy texture of the wine mirrors that of the rice dish – or to scallops, whose delicate sweetness is underscored by the wine’s acidity and herbal aromas.
Special characteristics
What distinguishes this white wine is its lightness and drinkability, which are unrivalled in the Priorat. Where others opt for power, Huber chooses the path of elegance – the result is a Priorat that dances rather than blusters. The 15 hectares are farmed organically and biodynamically, an approach reflected in the clarity and freshness of this wine.
