Tasting note

Colour & Appearance
Pale golden yellow with a fine, radiant and lively rising mousseux.
Nose
An expressive, floral opening reminiscent of a flower meadow, quickly followed by yeasty brioche notes. Joining these are juicy fruit aromas of pear, quince, apple, vineyard peach and delicate apricot, underpinned by a cool mineral quality.
Palate
On the palate, it reveals a brilliant, vertical structure with vibrant freshness. The acidity strikes in a gripping and exhilarating manner, whilst the delicate perlage feels creamy. Mouth-watering notes of stone fruit meet plenty of volume and a fine texture without any malolactic heaviness.
Finish
Vibrant and taut on the finish, carried by an almost saline minerality and enduring freshness.
Terroir & Origin
The grapes hail from approximately 30-year-old vines surrounding Kientzheim and Wettolsheim. The soils of clay-limestone, sand and gravel impart its signature tension to this sparkling wine. Domaine Albert Mann has been working according to biodynamic principles since 1997 and is Demeter-certified.
Grape Variety & Vinification
A blend of 87% Pinot Blanc and Auxerrois, 8% Pinot Noir and 5% Pinot Gris. Following selective hand-harvesting and primary fermentation in tank, the wine matures on its lees for a minimum of 18 months. Vinification deliberately avoids malolactic fermentation in order to preserve the taut acid structure.
Food Pairings
An excellent aperitif that pairs equally brilliantly with seafood, oysters, scallops or a fine sushi selection.
Particularities
A biodynamic sparkling wine from Demeter-certified soils that rivals many a classic Champagne in terms of finesse and drive – uncompromisingly dry in style and defined by natural vitality.
