Tasting note

The Fosilni Breg, the mountain of fossils, is characterised by its coral-limestone soils and rich in fossilised sea creatures. The Domaine's Sauvignon blanc vines grow on barren soils with a layer of clay-rich marl, also known as flysch or opok, and fertile brown earth on top. The grapes for the 2019 Réserve are particularly small-berried and are only used for the Réserve in special years. The site is located directly next to the Zieregg at 340-480 metres above sea level. After a long maceration period, the Réserve was fermented spontaneously, matured on the fine lees for 46 months and bottled unfiltered.

Color:

Rich straw yellow, bright and clear.

Nose:

The 2019 Sauvignon blanc Réserve from Domaine Ciringa radiates from the goblet with yellow-fruity concentration and a stony, sparse finish. Citrus blossom, orange and tangerine flavours and the scent of a well-tended lemon grove can be found in the overtones. Delicate vegetal notes are reminiscent of fine kitchen herbs, fennel greens and oyster shells. A sophisticated summer party in a classy chateau, clinking glasses, laughter, white jackets and beautiful guests.

Mouth:

Creamy on the palate with a stable punch and a firm mineral base. Nothing wobbles here, everything is taut and sinewy without veering into austerity. Smooth on the palate, it seems to vibrate with minerality, the acidity acts like a prompter from offstage and sets the tone: Into the chalice! Defined by the soils, the flavour subordinates itself submissively without negating its essence, on the contrary. A prime example of how important origin is for Sauvignon blanc.

Food pairing suggestions

  • Ravioli with ricotta and wild fennel in white tomato stock (Vegetable & Vegetarian)
  • Smoked mackerel with gooseberry chutney (fish)
  • Leg of young pig with braised fennel and peperoncini (meat)
