- Colour & Appearance
- Medium cherry red, already announcing the elegance and finesse of this Premier Cru vineyard site in the glass.
- Nose
- A seductive bouquet of ripe forest berries and candied raspberries dominates the nose. Beneath this unfold subtle notes of damp forest floor and undergrowth, accompanied by a slightly lactic component. Fine accents of rose petals, violets and chalk lend the wine additional complexity and Burgundian typicity.
- Palate
- The Les Lavières presents itself juicy and supple with that candied berry fruit already promised on the nose. The acidity remains discreetly in the background, whilst with increasing air exposure the wine gains in power, juiciness and freshness. The tannins emerge more distinctly and lend the Pinot Noir a more masculine, darker structure than, for instance, the Aux Fournaux. After about an hour, the wine reaches its full balance – composed, harmonious and already extremely accessible.

- Medium length with persistent berry fruit and fine mineral character, reminiscent of the chalky Laves of the terroir.
- Terroir & Origin
- The Premier Cru vineyard site Les Lavières owes its name to the flat limestone fragments (Laves) that once served as roof tiles. Chandon de Briailles manages 2.61 hectares in the heart of this 17.66-hectare vineyard. The vines, around 50 years old, are oriented south-south-east on a complex soil composed of sandstone, sand and marl with iron-rich oolite in the upper section and reddish-brown limestone in the lower section.
- Grape Variety & Vinification
- 100% Pinot Noir, spontaneously fermented in wooden vat with a high proportion of whole bunches. Maturation took place for 14 months in barriques and tonneaux with minimal new wood, without stirring or racking. Bottled directly from barrel with minimal sulphur. Moderate alcohol content of 12.5% vol.

- Calf’s liver with wild mushrooms and port wine reduction, ravioli with game and porcini or pan-fried La Ratte potatoes with figs, porcini and chestnuts.

- An authentic Burgundy from the biodynamically managed Domaine Chandon de Briailles, reflecting both terroir and the winemaker’s signature. Already accessible, but with further ageing potential.
