Tom Lubbe of Domaine Matassa is among the pioneers of the natural wine movement in Roussillon. His Rufo blanc embodies a radical reinterpretation of the often underestimated Macabeu grape: light-footed, crystalline and possessed of an enchanting drinkability. At just 10% alcohol, this wine resists the trend towards opulence and heaviness – here precision and elegance reign supreme. The magnum bottle underscores the communal character of this unpretentious, yet far from simple white wine.
Terroir & Origin
Roussillon, wedged between the Mediterranean and the Pyrenees, is shaped by intense sunshine, Tramontana winds and sparse slate soils. Matassa tends old parcels in the foothills of the Pyrenees near Calce, where cool night temperatures and altitude preserve the necessary freshness. Lubbe practises biodynamic viticulture with uncompromising handwork – no herbicides, no additives, minimal intervention. The VdF classification (Vin de France) grants him maximum freedom beyond rigid appellation rules.
Grape Variety & Vinification
Macabeu, known as Macabeo in Catalonia, is mostly used for Cava and often remains overlooked in still wine production. Lubbe reveals its true potential for vibrant, mineral white wines. The grapes are harvested early to ensure freshness and moderate alcohol levels. Vinification takes place without temperature control, without sulphur additions during fermentation and with spontaneous yeasts. The result: a wine of vibrant energy that holds fruit and tension in perfect balance – authentic, unfiltered, living.
