- Crystal clear and of striking purity. Lemongrass and verbena meet the juicy freshness of grapefruit with its aromatic zest. These are joined by green and yellow apples, interwoven with fine stone smoke and a mineral salt stone note that recalls the slate soils of Hendelberg. A melange that unites fruit, stone and herbs in perfect harmony.

- Here the art of Kabinett reveals itself in perfection: acidity and sweetness in ideal balance, neither obtrusive nor restrained. The wine presents itself as joyful, sensual and full of energy with a radiant brightness that is typical of great Rheingau Rieslings. White-fleshed stone fruit and citrus are carried by a fine, almost mealy stone texture, complemented by a subtle yeasty character that lends the wine additional complexity and depth. - The Hallgartener Hendelberg ranks among the finest vineyard sites of the Rheingau: 23 hectares on gravelly slate soils with quartz inclusions and phyllite slate, up to 300 metres high with south-southwest exposure and 40% gradient. This demanding terroir shapes the wine with its characteristic minerality and tension.
- Grape Variety & Vinification
- Hand-harvested, gentle whole-bunch pressing over several hours, spontaneous fermentation and maturation on full lees in traditional wooden casks – Peter Jakob Kühn works biodynamically and with the greatest respect for the raw material. At 10.5% alcohol, 21.3 g/l residual sugar and 7.3 g/l acidity, a textbook Kabinett.

- Poultry terrine, pan-fried trout, asparagus with hollandaise sauce, scallops, Thai curry dishes with moderate spice or classically with roast pork with apple compote.
