The still very young Zieregg shows an impressive density, depth and at the same time fineness of aromas on the nose. One thinks to sense a smoky flint like from Pouilly Fumé sites, a little young walnut and thyme before the fruit of cassis, some gooseberries and fermented salt lemon takes over the stage. Freshly polished limestone and oyster shell show in the background with a slightly powdery yet spicy cool note.
The Zieregg Sauvignon blanc is soft and silky at the beginning, almost cuddly and very elegant. But then the wine builds up enormous pressure within seconds and fills the entire mouth with a mixture of lime powder, white pepper, bitter and refreshing grapefruit notes, the already mentioned salt lemon and a little lemon balm and nettle. It's impressive how present the stone, salt and electrifying minerality of the site are already finding their way through the fine white and green fruit. The Sauvignon has great aromatic depth into the long finish. It definitely needs big glasses and plenty of time. Its potential is enormous - the Tements speak of 30 years.
