With this late release, Rémi Jobard impressively proves that Aligoté can be much more than a simple bistro wine. Made from 50 to 70-year-old vines from the En Buzigny parcel, this wine was given two additional years of ageing in the cellar - a treatment that is usually only given to Grand Crus. The result is an Aligoté of exceptional complexity and depth.

Colour & appearance

Pale straw yellow with lively green reflections, which indicate the youthful freshness despite the additional ripening time.

Nose

The bouquet unfolds with noble restraint: ripe yellow apple and full-bodied pear meet quince peel. Underneath this is a creamy layer of sweet cream butter and buttered yeast biscuits. Fine herbal notes of chervil and tarragon are counterpointed by slightly tart accents of goutweed and sorrel. A nose that deserves time and large glasses - no loud aromas, but distinguished elegance.

Palate

The true class of this wine is revealed on the palate. With a powerful presence and almost Burgundian noblesse, it is perfectly balanced. The texture is dense and concentrated, supported by a low-frequency, pulsating acidity structure. Distinctive tart notes - phenolics of green apple peel - are interspersed with subtle hints of aniseed, chervil and fennel green. Jobard's 600-litre Stockinger vats allow a slow exchange of oxygen, which gives the wine structure without overloading it with wood. The finish is animatingly tart, delicately fruity and remarkably long.

General information

Rémi Jobard has been a certified organic farmer since 2008 and relies on organic fertilisation. His philosophy is to express the chalky soils of Meursault through careful vinification. With 13% alcohol, the wine is powerful but never heavy.

The tart elegance and concentration predestine this wine for sophisticated dishes: Sicilian fennel au gratin with pine nuts and sultanas, Pasta con le Sarde or Rabbit with early leeks from the oven are perfect companions.
