Tasting note
Colour & Appearance
Luminous lemon yellow with lively green reflections – the fine, even bead rises with discipline and signals from the outset the precision that this Cava delivers across the board.
Nose
The nose surprises with remarkable complexity for an entry-level wine: ripe apricot, mirabelle plum and persimmon meet zesty lemon juice and grapefruit notes. To this is added a saline, iodine-tinged hint of oyster shell and sea spray, which reveals the maritime soul of the wine. In the background, dried herbs – tarragon, bay leaf – weave together with a delicate bouquet of orange blossom and jasmine tea.
Palate
On the palate, the Brut Nature character shows itself without compromise: bone-dry, linear and marked by striking minerality. The carbonation is present, but always in service – it drives the wine forward purposefully, without dominating. Chalk and limestone define the profile, accompanied by citric and maritime notes that flow seamlessly from the nose to the palate. A purist, lean wine with real backbone.
Finish
Long, saline and suffused with a cool chalky character. Not a gram of sugar distracts – the finish belongs entirely to the minerality and a final hint of citrus peel.
Grape Variety & Vinification
The classic Cava blend of Xarello and Macabeu is aged at Recaredo using the traditional method with bottle fermentation. As a Brut Nature, no dosage is added – the wine speaks for itself, without a sweet veil.
Food Pairing Suggestions
Ideal with scallop carpaccio with lemon gel and seaweed salad – the wine’s salinity and seafood complement each other perfectly. Equally convincing with pea salad with mint and Jamón Ibérico or with pointed cabbage tacos with sautéed celeriac, feta and date barbecue sauce, where the wine’s dryness beautifully balances the richness of the flavours.
