Wine Description for Reserva Particular Brut Nature 2017 by Recaredo
- Colour & Appearance
- Luminous lemon yellow with pronounced green reflections. The perlage is extraordinarily fine and even – almost meditative in its stillness.
- Nose
- Complex, multi-layered and possessed of quiet authority. Initially dominated by a deep, serious yeast character that immediately signals presence. Beneath it: sliced almonds, an entire spectrum of Mediterranean herbs – marjoram, sage, thyme, oregano – along with delicate floral notes of apple and almond blossom. A hint of butterscotch develops discreetly, always controlled. Yet the most striking accent is set by the maritime dimension: oyster shell, fresh seaweed, sea spray – carried by a sparse, reductive undertone of chalk and stone.
- Palate
- Bright, green, focused. The fruit presents itself with restraint – lemon zest, lime juice, kaffir lime zest – complemented by a delicate yellow-fruit nuance of mirabelle and apricot. Fresh herbs echo the nose and combine with a crisp, stony minerality to create an overall impression of great harmony and inner tension.
- Finish
- Long, precise and carried by quiet energy. Maritime notes, herbaceousness and citrus fruit return in finely measured doses – coherent, balanced, without any heaviness. A wine that doesn’t impose itself and for precisely that reason lingers.
- Terroir & Origin
- The vineyards lie in Alt Penedès, where limestone shapes the terroir in its purest form. The vines were planted as far back as the 1950s and 1960s – their age lends the wine that concentration and stillness which no technique can replace.
- Grape Variety & Vinification
- An almost perfectly balanced cuvée of Xarel·lo and Macabeu, made using the traditional method with a minimum lees-ageing period of 80 months – far beyond any minimum requirement. Brut Nature, meaning no dosage whatsoever. Since 1962 this character has been consistently perfected.
- Food Pairing Recommendations
- Oysters and seafood are the obvious companions – the wine’s maritime dimension finds its natural counterpart here. Equally convincing with sea urchin, scallops with herb butter or a simple grilled sea bass with lemon. For vegetarian preferences: artichokes with aioli or a risotto with Parmesan and lemon zest.
- Special Characteristics
- The Reserva Particular is Recaredo’s quiet flagship – not a loud wine, but a monument for receptive connoisseurs. The combination of vines over 60 years old, 80 months of lees-ageing and complete absence of dosage makes this Cava one of Europe’s most authentic sparkling wines – and at a price that, given this performance, is simply extraordinary.
