Wine Description for Puligny-Montrachet “Les Enseignères” AOC 2023 by Thomas-Collardot

Character
A classic Puligny-Montrachet from the heart of the Côte de Beaune – precise, mineral-driven and characterised by that unmistakable tension that makes this appellation one of the world’s most venerable white wine addresses. With 13.5% vol. and dry vinification, this wine embodies the philosophy of a Burgundy that pursues depth and structure rather than opulence.
Terroir & Origin
Puligny-Montrachet lies in the southern part of the Côte de Beaune and is regarded as the epitome of white Burgundy. The vineyard site “Les Enseignères” belongs to the village-level appellations – not a Premier Cru, but a terroir that impressively reflects the typical signature of the place: calcareous, clayey soils on a foundation of Jurassic limestone, which impart to Chardonnay that characteristic minerality and freshness for which Puligny is world-renowned. The vintage 2023 brought warm, dry conditions to Burgundy, producing ripe, expressive wines with good structure.
Grape Variety & Vinification
Pure Chardonnay – in Burgundy the only conceivable choice. The estate Thomas-Collardot from Puligny-Montrachet stands for a carefully crafted, tradition-conscious approach that places terroir at the forefront. The wine is typically aged in oak barrels, with oak influence carefully calibrated to avoid masking the wine’s natural tension and terroir-driven minerality. The result is a Chardonnay that prioritises elegance over extraction.
Food Pairing Suggestions
The vibrant acidity and mineral texture of this wine make it an ideal companion for turbot with beurre blanc, scallops on pea purée or a classic Poulet de Bresse à la crème. Equally harmonious: mature Comté or Chabichou du Poitou – cheeses that reflect the calcareous origins of the wine on the plate.
