- The nose opens slowly, almost reluctantly, then unfolds a quiet elegance: lemon custard, crème pâtissière and shortbread with salted butter dominate the picture – rich, yet never heavy. In the background whisper dried meadow flowers, herbal tea and a hint of crisp apple. A still life in aromas, one to contemplate rather than grasp.

- On the palate, the wine reveals what mature fruit and uncompromising handwork can achieve: a silky, almost meditative texture that unfolds effortlessly. The ripe, firmly bound acidity spans a long arc, flanked by powdery-fine tannins that lend the wine contour and depth without dominating it. Nothing pushes, nothing overstates – everything is in perfect balance. A Chardonnay that seems to have become rather than been made.

- Long, calm and marked by mineral precision. The aftertaste carries the chalky-silicatic signature of the Bajocian soil – saline, dry, lingering.

- The parcel „Le Clocheton“ lies in the heart of the historic vineyard site Les Quarts in Pouilly-Vinzelles, Mâconnais. South-easterly exposure at around 230 metres altitude, clay and limestone soils of the Bajocian, threaded with silicatic crystals – a terroir that delivers tension and depth in equal measure. Biodynamic viticulture, meticulous handwork, minimal yields.
- Grape Variety & Vinification
- Chardonnay from vines aged 50 to 80 years. Selective hand-harvesting, whole-bunch pressing, spontaneous fermentation without added sulphur. Maturation exclusively in a 19-hectolitre concrete egg, whose oval shape creates natural yeast convection and shapes the wine’s characteristic silkiness. Bottled unfiltered, minimal sulphur added at bottling. Limited release.
- Food Pairing Suggestions
- The structural density and fine minerality make this wine an ideal companion to sole meunière, scallops with beurre blanc or a classic Poulet de Bresse à la crème. Also an apt choice with aged Comté or Vacherin Mont-d’Or.
