Colour & Appearance
Pale orange with silky, natural cloudiness – a visual testament to uncompromising natural wine philosophy.
Nose
An olfactory feast reminiscent of a morning stroll past a French boulangerie. Plaited yeast bread with icing sugar, buttery croissants, orange marmalade and roasted hazelnuts dominate. These are joined by herbal-spicy nuances of sage, lemon balm and bitter orange zest – complex and inviting in equal measure.
Palate
The entry is marked by impressive texture. Fine-grained, persistent tannins take the lead immediately – stimulating like Darjeeling tea, silky with invigorating astringency. They coat the palate completely and bring delicate roasted notes of salted dark toast. The orange marmalade returns, this time accompanied by a subtle saltiness that lends the wine tension and depth.
Finish
Long, dry and carried by fine tannins. The astringency remains present without becoming intrusive – a lingering, meditative conclusion with hints of bitter orange and herbal tea.
Terroir & Origin
From the Premier Cru vineyard site Île des Vergelesses in Pernand-Vergelesses, one of Burgundy’s most underrated appellations. The biodynamically farmed vines were planted by François de Nicolays grandfather.

Pinot Blanc – a rarity in Chardonnay-dominated Burgundy. Produced as an orange wine: spontaneous fermentation after extended skin contact, ageing on the lees, bottled unfiltered and unsulphited. A radical, uncompromising approach that redefines the variety.
