Wine Description for NUMEN Grüner Veltliner 2021 by Johannes Zillinger

Colour & Appearance
Radiant, intense golden yellow – a visual testament to physiological ripeness and 22 months of yeast ageing in amphorae.
Nose
Powerful and multifaceted: green apples and young mango meet walnut and white pepper. Wild herbal notes of hawthorn blossom, tarragon and sage complete the picture. A wine that already reveals its complexity and depth on the nose – no compromises, a clear statement.
Palate
The entry surprises with a fascinating sweet-saline interplay that emerges purely from texture – no residual sugar, only pure extraction and ripeness. The vibrant acidity stimulates the salivary glands immediately, whilst a fine, spicy tannin from the amphorae fermentation provides structure and grip. The pronounced minerality carries the wine with tension.
Finish
Exceptionally long and persistent. The spicy tannin structure and saline minerality linger for minutes, unmistakably awakening the appetite for food.

This wine demands sophisticated cuisine: roasted turbot, calf’s sweetbread with morels, aged Comté or hard cheese from mountain dairies. Also an excellent choice with roasted poultry with herb crust or mushroom risotto.
