Colour & Appearance
Radiant, deep golden yellow – a wine that unmistakably signals in the glass that no ordinary Grüner Veltliner awaits here.
Nose
The nose is complex, expressive and of remarkable depth. Green apple and young mango meet the classic white pepper spice of Grüner Veltliner, accompanied by creamy walnut. Wild herbs such as tarragon, sage and delicate blossom lend the bouquet an almost meditative complexity – entirely in keeping with the name: a metaphysical activity in the glass.
Palate
The entry is seductive – a sweet-saline interplay that immediately captivates, despite the complete absence of residual sugar. The vibrant, precise acidity provides tension and freshness, whilst a fine, silky tannin structure – unusual for a white wine – imparts depth and texture. The wine is powerful yet elegant, with pronounced minerality that recalls chalk and stone.
Finish
Exceptionally long, spicy aftertaste with persistent minerality and fine herbal spice. The finish is saline, appetising and simply makes you crave more – and food.
Terroir & Origin
The grapes come from the oldest vines at Weingut Zillinger in the Weinviertel, Austria’s largest wine region. Old vines, deep roots, concentrated fruit – the terroir speaks here with unmistakable clarity.
Grape Variety & Vinification
Physiologically fully ripe Grüner Veltliner grapes are fermented intracellularly in amphorae and subsequently aged 22 months without any intervention on the lees. No filtration, no compromise – pure expression of nature, as Johannes Zillinger himself puts it: “Wines inspired by nature.”
Food Pairing Recommendations
The saline minerality and appetising spice demand a culinary counterpart. Ideal with grilled pike-perch with herb butter, Wiener Backhendl, risotto with wild herbs and Parmesan or a classic Tafelspitz. Also a revelation as an accompaniment to aged Comté or walnut cheese.
