Wine description for Cassiano IGT 2021 from Manincor

Colour & appearance

A dark, shimmering cherry red colour with delicate violet reflections presents itself in the glass - visually a promise of concentration and depth.

Nose

The nose reveals an impressive complexity of dark fruit flavours. Morello cherry, sweet cherry, blackberry and blueberry dominate the bouquet, supported by subtle notes of barberry and raspberry. Warm leather and roasted coffee beans add balsamic spice. The spice spectrum ranges from black pepper to cardamom and juniper. Mediterranean accents - Black olives and rosemary - lend the wine a Mediterranean charm, while fine tobacco notes round off the aromatic complexity.

Palate

The dark fruit fullness continues seamlessly on the palate. The most remarkable feature: the silky-melting tannins, which create a perfect balance between fruit intensity and structure-giving bitter substances. A stable acidity framework supports the wine, while delicate tart notes provide freshness. The spicy component with pepper, juniper and Mediterranean accents lends length and elegance to the finish.

General information

The Cassiano 2021 is a carefully composed cuvée of 39% Merlot, 33% Cabernet Franc, 8% Tempranillo, 7% Cabernet Sauvignon, 8% Petit Verdot and 5% Syrah. The grapes come from south-east-facing vineyards at an altitude of 250-280 metres with sandy loam soils and limestone gravel. The cool weather in 2021 with sunny days and cool nights resulted in ideal physiological ripeness. After separate vinification in large wooden vats with 10-20 days of maceration, the wine matured for 18 months in small barriques (50% first fermentation). Blending took place shortly before bottling - a sign of the highest quality standards.

Food pairing suggestions

This powerful South Tyrolean harmonises perfectly with Roast duck with red cabbage and dumplings, Braised short rib with beetroot and rosemary butter or one Black salsify pan with porcini mushrooms and pumpernickel.

Special features

The Cassiano 2021 impresses with its exceptional balance and ability to combine power with finesse. A wine that combines South Tyrolean precision with Mediterranean soul - already enjoyable, with clear ageing potential.
