Background
The wine comes from Macabeo vines that have thrived since 1957 on slate soils interspersed with ferruginous red clay.
Color
It sparkles in a delicate yellow, interspersed with clear green reflections.
Scent
This vintage retains its distinctive spiciness and conciseness with notes of fennel, flint, wood smoke and sepia ink. With sufficient aeration, additional aromas of apple, grapefruit zest and verbena emerge.
Taste
On the palate, the wine presents a pleasant challenge thanks to its spiciness and minerality, which spreads like a carpet on the tongue. All elements are multi-layered and skilfully interwoven. The wine goes well with purist dishes with expressive spicy aromas, just like itself. Although it is already good to drink, ageing for a few years can give it further opportunities to develop.

Alternative food accompaniment
The wine will add an upper toon to dishes such as tomato soup with herb dumplings, crispy quail breast on warm celery with pine nuts or smoked char on black pasta with saffron nage. It could go equally well with grilled lemon chicken, porcini mushroom risotto or green asparagus in a light hollandaise sauce.
