Thanks to the 1995 regulation of the DOC Vin Santo del Chianti, Il Passito by Corzano e Paterno may no longer be labelled under the name Vin Santo because it falls short of the minimum alcohol content of 13%.
It is made from selected Trebbiano and Malvasia grapes, which are first hung whole to dry in the "Vinsantaia". After about 3 months of ripening, the shrivelled berries are selected again and gently pressed for 24 hours. After decanting for seven days, the must is placed on the mother lees in traditional "caratelli", the barrels are sealed and stored in the well-ventilated "vinsantaia" for 13 years without any intervention. Il Passito di Corzano is marketed as IGT Tipica Passito.

Nose
The 2006 Il Passito di Corzano is like a Win-Zip file on the nose. It unpacks, and unpacks, and unpacks... After the volatile acidity has disappeared thanks to large glasses, aromas of dried fruits such as figs and dates emerge. Almonds, roasted hazelnuts and salted caramel are underpinned by toffee, candied orange peel, sultanas and light tobacco.
Mouth
The agile acidity of this ambrosially viscous nectar bundles the lusciously expansive aromas of the initial drink into an equilibrium with high vibration and tension. The power of the dried fruits combines in harmony with the delicate saline notes and citrus oils to create a highly concentrated symphony with an orchestral finish and bacchic length.
