Vins El Cep delivers with this Brut Nature an unvarnished, authentic Cava that dispenses entirely with dosage. The name „Claror“ – Catalan for clarity – is programme: here the pure essence of Catalan grape varieties Xarel·lo and Macabeu reveals itself after a minimum of 15 months of bottle fermentation. The moderate alcohol content of 12% underscores the elegance and drinkability that this sparkling wine embodies.
Terroir & Origin
The Penedès region, heartland of Cava production, offers with its chalky soils and Mediterranean climate with continental influences ideal conditions for characterful sparkling wines. Vins El Cep works with grapes from its own vineyards, which provide the mineral freshness and structure for which this region is renowned. The higher-altitude sites ensure the necessary acidity structure that carries a Brut Nature without residual sugar.
Grape Variety & Vinification
Xarel·lo forms the backbone of many great Cavas – a variety that contributes structure, body and phenolic depth. Macabeu complements with floral notes and a certain suppleness. The traditional method of bottle fermentation using Méthode Champenoise gives this Cava its fine perlage and complex yeast notes. As a Brut Nature (less than 3g residual sugar), the wine presents itself uncompromisingly honest – any flaw would reveal itself immediately, yet here artisanal precision speaks for itself.
